Just got another Nagakiba from a friend. Dual welding them right now with Bloodhound step/blood slash bleed and frost. I'm doing the same thing, blood nagakiba in main hand and uchigatana in right. I tested out keen nagakiba in right hand vs blood on the Giant bears in limgrave and the blood katana seemed to kill them a little quicker.

You want to be fast rolling with a dex build. Vitality is probably your most important stat besides dex, since you'll be using very little armor.
